Tortilla Pizza

Our family has been focused on both improving our health and cutting expenses. A key aspect of this endeavor involves preparing most of our meals at home. Recently, we had some leftover homemade tortillas and chicken. My husband came up with the idea of making homemade chicken bacon ranch pizzas using tortillas as the crust. The outcome was absolutely delightful! Despite not having mozzarella cheese on hand, we substituted it with Monterey Jack cheese, and the result was a mouthwatering success. You can find the recipe we followed below. 

 

Ingredients:

– 2 cups cooked chicken (or as much or as little as desired)

– 2 cups Monterey Jack cheese

– 12 oz of cooked bacon

– 6 large tortillas 

– 2 tsp dried basil

– Ranch, enough to generously cover the tortillas

 

Instructions:

1. Preheat your oven to 425°F.

2. Place the tortillas on a baking sheet. You can overlap tortillas for a thicker crust if you prefer.

3. Brush a layer of ranch on one side of the tortillas, leaving a small border around the edges for the crust.

5. Add your toppings; chicken, bacon and Monterey Jack cheese. 

6. Sprinkle some dried basil on top for extra flavor if desired.

7. Bake in the preheated oven for about 8-10 minutes or until the edges of the tortillas are crispy and the cheese is melted and bubbly.

8. Remove the tortilla pizzas from the oven and let them cool for a minute or two before slicing.

9. Serve hot, and enjoy your homemade tortilla pizzas!

 

Feel free to get creative with your toppings. You can add vegetables, pepperoni, olives, or any of your favorite pizza toppings. It’s a versatile and quick way to make individual-sized pizzas at home. Enjoy your delicious and budget-friendly homemade meal!
